| Maple syrup
can be used in a variety of ways. Here are some of our
favorites:
· In baked beans. Instead of adding brown sugar,
add maple
syrup.
· On ice cream. Add a few of your favorite toasted
nuts.
· On yogurt, cooked oatmeal, over fresh fruit.
· Use as a glaze on chicken wings, pork chops,
pork
tenderloin and ham.
Add a small amount to your
pot roast.
· Add to your coffee or tea.
· Substitute maple syrup for honey in bread and
muffin
recipes.
· Put maple syrup on winter squash or sweet potatoes.
· And of course, on pancakes, waffles and french
toast!

Canadian Maple Brown Bread
3/4 C uncooked rolled oats
1 1/4 C boiling water
1 pkg active dry yeast
1/4 C warm water (105 - 115 degrees)
1/4 tsp sugar
1/4 tsp ginger
1/2 C milk
1/3 C maple syrup
1/4 C brown sugar
1/4 C butter or margarine
2 tsp salt
5 C all purpose flour
1 C whole wheat flour
1/2 C golden raisins
Maple syrup and maple sugar
Combine oats and 1 1/4 C boiling water in a small bowl.
Cover and let stand 20 minutes. Dissolve yeast, ginger
and sugar in warm water in a large bowl; let stand until
bubbly, about 5 minutes. Combine milk, 1/3 C maple syrup,
brown sugar, butter and salt in small pan. Heat over
low heat until butter is melted. Cool to lukewarm. Stir
into yeast. Stir in oats mixture. Mix in flour and raisins
to make a stiff dough. Turn dough onto floured surface.
Knead until smooth and elastic, about 10 minutes. Place
in greased bowl, turn greased side up. Cover; let rise
in a warm place until double (about 1 1/2 hours).
Punch down dough; divide in half. Shape in 2 greased
loaf pans, cover and let rise until double (about 1
1/2 hours).
Heat oven to 350 degrees. Bake 40 to 45 minutes or
until golden brown. Remove from pans. Brush tops with
maple syrup and sprinkle with maple sugar while still
warm. Cool on wire rack.
Maple Gingerbread
1 C maple syrup
2 C flour
1/2 tsp salt
1 tsp ginger
1 tsp soda
1 egg slightly beaten
1 C plain or vanilla Yogurt
(add 1 Tbs sugar if plain yogurt)
1/4 C sunflower oil
Combine and sift dry ingredients. In a separate bowl,
mix egg with maple syrup and add yogurt. Combine the
mixtures and bake in a greased loaf pan at 350 degrees
for about 30-40 minutes.
Maple Pecan Pie
5 eggs 1/4 tsp salt
3 Tbs butter ( soft or melted) 3 Tbs flour
1/2 C sugar 2 C pecan halves
11/4 C maple syrup 1 unbaked 9 or 10 deep
dish pie shell
1 tsp vanilla
Beat eggs lightly. Add butter, sugar, syrup, vanilla,
salt, flour and pecans. Pour into pie shell. Bake at
350 degrees for about 40 minutes or until center is
soft but not quite set.
Maple BBQ Sauce
3 C ketchup 1 Tbs dry mustard
1 C water 1 Tbs paprika
6 Tbs vinegar 2 Tbs pepper
1/2 C Worcestershire sauce 1/2 tsp salt
3/4 C maple syrup
Combine all ingredients and simmer 5 minutes.
Maple Dijon Salad Dressing
1/3 C maple syrup
1/3 C red wine vinegar
1/3 C dijon mustard
1/3 C light olive oil
Mix or shake thoroughly. Serve over chilled greens.
